I suppose this isn’t cooking because there isn’t any cooking involved. Just chopping. But I came up with this salad last week and have made it at least four times now. It’s so good. Here’s what I came up with.

Summer Strawberry and Cucumber Salad
serves 2
1/2-3/4 of a cucumber, washed, peeled, and sliced thin
8-10 strawberries, washed and quartered
A few very thin slices of sweet onion
1-2 tablespoons of your favorite vinaigrette dressing (we use Garlic Expressions)
Salt and pepper to taste

Mix it all up. Then let it sit for maybe a half hour so the cucumber and onion soften a little. Enjoy!

Seriously, this is so light and refreshing. It’s perfect for warm weather and grilling out. It would be awesome with almonds or sunflower seeds added to it too. And feta. Ohhh, feta is definitely happening.
